Recipe: Roasted Zucchini with Feta and Green Onions
So good you will make it as a side and end up eating it as dinner!
Ingredients:
4 	 	medium green zucchini
8-10 green onions (save some chopped green ends for topping)
6 	 	cloves garlic, minced
1 	tsp. 	sea-salt
2 	 	T extra-virgin Olive Oil
1 	cup 	feta cheese
Instructions:
Preheat oven to 375 F
Cut zucchini lengthwise down the middle and then cut each piece into half-moon pieces about 1/2 inch thick. Clean the green onions and slice into diagonal pieces about 2 inches long.
Put zucchini and onions into baking dish.

Add olive oil, salt, and garlic, mix to coat squash. Crumble feta cheese over.

Roast for 25 minutes or until the vegetables are barely tender. Stir the vegetable-cheese mixture once or twice during roasting. Serve hot, with chopped onion greens on top.
