Recipe: Baked Parmesan Crusted Zucchini Sticks
Ingredients:
1 pound zucchini
1/2 cup Bread crumbs
1/2 cup parmigiano reggiano, grated
1 t dried oregano leaves, crushed
1 egg
Salt and pepper to taste
Instructions:
Preheat oven to 425 degrees
Slice zucchini into even sticks

Season with salt and pepper, set aside.

Combine bread crumbs, parmigiano reggiano and oregano in a bowl.

Beat egg in a separate bowl.
Dip zucchini into egg and then dredge in the bread crumb mixture. Place the zucchini on a baking sheet in a single layer with the skin side down.

Bake until golden brown, about 20-25 minutes.
