Recipe: Nutty Roasted Green Beans, Asparagus and Brussels Sprouts
Ingredients:

1/2 lb. Green Beans, fresh & trimmed
1/2 lb. Asparagus, trimmed & cut into 2 inch segments
1/2 lb. Brussels Sprouts, trimmed & halved 

1 	 	TBSP Olive Oil
1 TBSP Lemon Juice
1 	 	tsp Lemon Zest
1/4 	cup 	Pine Nuts, toasted
1 TBSP Parmesan,  freshly grated

Salt and pepper to taste
Instructions:
Preheat oven to 450 F.

Trim green beans, asparagus and Brussels Sprouts. 

Add to a mixing bowl and toss with olive oil and lemon juice.
Arrange in a single layer on roasting pan

Roast for 20 minutes, shaking pan occasionally. When sprouts are slightly crisp and golden brown on the edges they are done.
Place into previous bowl and toss together with toasted pine nuts and lemon zest. Upon serving top with shredded Parmesan cheese, salt and pepper. Enjoy!
