Black Bean, Red Pepper and Quinoa Salad
I do believe that once you have it, you have to have more. It is sort of like what they about tattoos.
Ingredients:
1 cup Dry Quinoa
2 cups Vegetable Broth
1 can Black Beans, drained
1 Red Bell Pepper, chopped
2 Green Onions, chopped
1/2 Shallot, finely chopped
Dressing:
2 tsp Raw Honey
1/2 Lime. juiced
2 Tbsp Rice Vinegar
2 Tbsp Flax Seed oil
1 Tbsp Ground Flax Seeds
2 tsp Salt
Instructions:

Add broth and quinoa into a pot and bring to a boil. Reduce heat and simmer for about 15 minutes, till liquid is absorbed. Set aside to cool.
In a jar combine honey, lime juice, rice vinegar, flax seed oil, ground flax seed and salt; shake to mix.
In a large bowl combine quinoa, black beans, bell pepper, and onions; drench with dressing.

Mix thoroughly to distribute the dressing. Chill before serving.
